I am going to garnish or fill the little tartlets made with Sweet Pastry or Pate a Foncer. As a rule Sweet Pastry that goes well with raw fruit, so you cook the pastry and the fruit together. I’ve put some almond cream in all the tarts in this tray and I am going to put a compote or apple puree and rhubarb compote in the other ones. To make Rhubarb compote it is a matter of chopping Rhubarb like this and for 1kg of rhubarb you add 200grams of sugar and cook until it thickens. Rhubarb renders a lot of water so you have to reduce it slowly until you get a paste like this and it is not very sweet, it has a nice little bite, its nice. I’ll start with the apricot.
